Renae a comment on her blog about how brave she was for stepping on the scales after Thanksgiving weekend--(she's also a preggie). In the comment I said that I wasn't going to be anywhere near the scales for at least another week of trying to get back on track. I lied. She inspired me and I got on the scale. I was terrified because I knew that I had ate like a piggy this weekend thanks to my mom's fabulous cooking. We ate lunch and dinner with my parents on Thanksgiving. Friday we ate at Qdoba's with Chris' family. We ate Thanksgiving left overs for lunch and dinner again at my parents on Saturday. And to top it off, we ate homemade pizza at my parent's on Sunday. Wow...I could throw up just typing this. Exercise for me was pretty much non-existent this weekend as well.
So I stepped on the scale, held my breath, looked down, and WHAT?!?! I had LOST TWO POUNDS!!! AHH!!! I weighed myself first thing when I woke up a week ago, and since then I have lost two pounds. I have no idea how it happened, but I'm not complaining! It was my very own Christmas miracle :)
I'm sure I've gained those two pounds back after tonight's dinner! I made a recipe of my mom's that is one of our favorites--Apricot Chicken. It's extremely easy to make and it's delicious too.
All you will need is chicken, the smallest bottle of Russian dressing, Apricot preserves (8 oz.), and a packet of Onion Soup mix. For the chicken, I use boneless skinless chicken breasts and my mom uses chicken leg quarters. Both are very yummy!
Step 1: Mix the Russian dressing, apricot preserves, and onion soup packet together in a small bowl.

Step 2: Place the chicken in a dish.

Step 3: Pour the ingredients you mixed onto the chicken.

Step 4: Bake at 375 degrees for 1 hour.
Step 5: Enjoy!!!!

I normally serve it with green bean casserole, deviled eggs, and mashed potatoes but we decided to step outside the box and try something different. Let me know if you try it!

That looks really good and easy!! I think I will have to try it. Congrats on the weight loss. I'm not preggars and I cannot imagine stepping on the scale right now, at least you have an excuse to gain weight!!

You are so adorable that I wonder sometimes how I had such a sweet daughter. Who takes pictures of their food, the items that go in the recipe, and then types out the recipe? I think you could be a young version of Martha Stewart. Don't change a thing! You are precious. I love you..............

Hey Megan, I am so with you. The 5lbs is gone. Just gone...This has been the most bizarre pregnancy as far as weight is concerned. I am going to try that recipe. The sides look so lo cal :)
Enjoy this while you can, it's the only time in your life you are allowed to gain weight :)
