Sometime last week I made a more nutritious version of pancakes I found on another blog. I was so confident they were going to turn out, I decided to take pictures along the way. They were scrumptious. The ingredients are listed at the bottom of this post.
Combine almond butter, flaxseed oil, egg, honey, yogurt and banana in a blender.
Blend mixture until smooth.
In a large mixing bowl, blend pancake mix, flaxseed meal and cinnamon. The recipe says to "add cinnamon, to taste." I love cinnamon, so I added a lot!
Add the blended mixture and the water to the dry mix.
Mix well.
Make pancakes!
I cut ours into pieces and then drizzled them with honey.
The recipe made a LOT of pancakes ...
So I cut up the leftovers, put them in ziploc bags, and stored them in the fridge for later.
2 c. regular old pancake mix
1 1/2 c. water
1/2 c. flaxseed meal
1/2 c. almond butter
1 banana
1 tsp. flaxseed oil
1 egg
1/3 c. plain, whole yogurt
1/4 c. honey
cinnamon, to taste
