I made these yummy cookies for the Office party we went to Thursday night. I saw the recipe on my used-to-be neighbor, Kelly's blog and I knew I had to make them! They were so good! I also sent some to work with Chris and he had someone ask that I post the recipe. So here it is!
Blend shortening, sugar, and pumpkin with a mixer.
Add the egg, flour, baking soda, and cinnamon
Mix well
Spoon dough onto an ungreased cookie sheet and bake for 10-12 minutes at 375 degrees.
While they were in the oven baking, I made the icing. Mix and heat butter, brown sugar and milk in a saucepan. Remove from heat once mixture starts to boil.
Once it has cooled slightly, add powdered sugar and vanilla and mix.
By now the cookies should be done baking or close to it!
Spread the icing on while the cookies are still hot. A little icing goes a long way once it melts, so I only put a little on each cookie.
Once they've cooled off a bit and set up, you can stack them up on a plate ... or you could just go ahead and shove every last one of them down your throat. I wouldn't recommend this if you're doing the 30 day Shred.
My sweet little pumpkin watched me bake while he played in his exersaucer. I could just eat him up! Seriously. Who needs cookies?

1 cup pumpkin (I used canned pumpkin)
1 egg
2 cups flour
1 tsp baking soda
1 tsp cinnamon
Ingredients for icing:
3 Tbsp butter
1/2 cup brown sugar
5 tsp milk
1 cup powdered sugar
1 tsp vanilla

Oh my! I made these, too! And they are super delish. Seeing all of your pics made me hungry for them all over again. :-)
